Black Garlic Pulled Pork

Pulled pork is ideal for burgers and sandwiches, or served with potato wedges or a crisp salad.

Ingredients:

  • 1 kg pork shoulder (kassler)

  • 3 tbsp Maldon sea salt

  • 1 dl Pure Garden Fifth Flavour umami sauce

  • 1 dl soy sauce

  • 5 allspice berries

  • 5 white peppercorns

  • 2 star anise

  • 2–3 dl Coca-Cola (not light)

  • Boiling water


Instructions:

Preheat the oven to 200°C. Prepare a large, high-sided baking dish or a heavy pot with a lid (a Dutch oven works perfectly for this recipe).


Rub the pork with salt and Fifth Flavour umami sauce. Place the pork in the pot. Add soy sauce, whole peppercorns, and star anise. Finally, pour in the Coca-Cola and give everything a light stir.


Heat water and pour it into the pot until the pork is just covered. Cook at 200°C for about 30 minutes.


Remove from the oven, reduce the temperature to 110°C, cover with a lid or foil, and continue cooking for 6 hours.


After cooking, remove from the oven and let the meat rest for about 1 hour.
