Hellapoliisi's Black Garlic Burgers

Get ready to make mind-blowing burgers! These are a MUST try!

Naturally aged garlic develops a sweet and tangy flavour with subtle hints of liquorice root and a rich umami taste. Black garlic is produced by cooking garlic at low temperatures under carefully controlled humidity conditions for several weeks. This process removes the sharp bitterness and strong smell typically associated with garlic.


Black garlic is visually striking and can be used both as a side and as a seasoning in cold and hot dishes. The range includes whole bulbs, individual cloves, and a rich black garlic seasoning sauce that can be used in a wide variety of dishes or served as a table condiment.

Below you’ll find two burger recipes—one meaty and one vegan. Why not make both at once!


Vegan burgers (serves 6)

Ingredients:

  • 6 ready vegan hamburger buns

  • black sesame seeds

Sweet potato & bean patties:

  • 1 dl breadcrumbs

  • 1½ dl water

  • 300 g sweet potato

  • 1 onion

  • ½ red chili

  • 2 Black Garlic cloves

  • 2–3 tbsp rapeseed oil OR olive oil (optional alternative)

  • 1 can chili beans (e.g. kidney beans)

  • 1 tsp salt


For frying:

  • Rapeseed oil OR olive oil


Fresh coleslaw:

  • 150 g red cabbage

  • 1 carrot

  • 1–2 tbsp apple cider vinegar

  • A pinch of salt

  • Black pepper, to taste (from a grinder)


To serve:

  • Fifth Flavour umami sauce

  • 1 beef tomato

  • 2 pickles, sliced

  • Radish sprouts OR other sprouts


Instructions:

  1. Place the breadcrumbs and water in a bowl and let them swell for a moment.

  2. Peel and grate the sweet potato. Peel and finely chop the onion. Finely chop the chili and Black Garlic cloves. Drain the chili beans.

  3. Heat the oil in a pan. Add the sweet potato, onion, chili, and black garlic and sauté briefly over high heat, then reduce the heat. Cook on low heat for 5–10 minutes.

  4. Add the drained beans to the breadcrumbs and mash them slightly by hand. Add the cooked vegetables and mix until evenly combined.

  5. Shape into patties and fry in a hot oiled pan on both sides until the surface is firm and nicely browned. Set aside.

  6. Prepare the coleslaw by slicing the red cabbage into thin strips.

  7. Peel and grate the carrot. Mix with apple cider vinegar, a pinch of salt, and black pepper.

  8. You can warm the burgers in the oven or in a clean hot pan, turning them as needed.

  9. If you want seeds on the buns, brush the surface with water using a pastry brush and sprinkle with black sesame seeds. Warm the buns in the oven.

  10. Spread Black Garlic seasoning sauce on the bottom bun.

  11. Add a generous layer of coleslaw.

  12. Place the sweet potato & bean patty on top, followed by tomato slices, pickles, and another good drizzle of Black Garlic seasoning sauce.

  13. Top with a handful of radish sprouts.

  14. Finish with the top bun and serve immediately!


Meat dishes and Fifth Flavour umami sauce are a perfect match!


Sometimes simple burgers are all you need, and they’re quick and easy to make. You can also add the seasoning sauce directly to minced meat for extra flavour.


Meaty burgers (serves 6)


Ingredients:

  • 6 ready hamburger buns

  • black sesame seeds

Patties:

  • 600 g ground beef

  • 1 tsp salt

  • 3 Black Garlic cloves

Fresh coleslaw:

  • 150 g red cabbage

  • 1 carrot

  • 1–2 tbsp apple cider vinegar

  • A pinch of salt

  • Black pepper, to taste (from a grinder)

Additional:

  • 6 tbsp crème fraîche

  • 6 tbsp smetana (sour cream)

  • 6 slices chili or jalapeño cheese

  • 1 beef tomato

  • 2 pickles, sliced

  • 6 tbsp Black Garlic seasoning sauce

  • Radish sprouts OR other sprouts


Instructions

  1. Take the ground beef out of the refrigerator about 30 minutes before cooking to bring it to room temperature. Mix in the salt and finely chopped Black Garlic cloves.

  2. Shape into evenly sized patties, flatten them thin, and set aside.

  3. Prepare the coleslaw by slicing the red cabbage into thin strips. Peel and grate the carrot.

  4. Mix in apple cider vinegar, a pinch of salt, and black pepper (from a grinder).

  5. Fry the beef patties in a hot oiled pan on both sides until fully cooked.

  6. You can warm the burger buns in the oven or in a clean hot pan, turning them as needed. If you want seeds on top, brush the surface with water using a pastry brush and sprinkle with black sesame seeds. Warm the buns in the oven.

  7. Spread crème fraîche or smetana on the bottom bun.

  8. Add a generous layer of coleslaw.

  9. Place the warm patty and a slice of chili cheese on top.

  10. Add tomato slices, pickles, and a good drizzle of Black Garlic seasoning sauce.

  11. Top with a handful of radish sprouts.

  12. Finish with the top bun and serve immediately!
